In this example of sorting, we will be attempt to do what this little squirrel is doing - sort food into various groups. The squirrel is looking for food that can be kept over a long and cold winter - our goal is to find the best item to take along with us on a safari that will last several days! We have some other restrictions too, i.e. that we have no way to cook food, or keep it cold.   Here are the food items we get to choose from:

The first step would be to identify the items that will not require refrigeration. This is what we now have to choose from:

The next step would be to identify the items that will not require cooking. This is what we now have to choose from:

          

The final step would be to identify the items that will keep for several days - the fruit!

If we only list the choices we made, and left the rest off the diagram, we could put it all in one line:

We started off with a BIG set, and narrowed it down, step-by-step, to a SMALL set. Subjects can be arranged this way too. This kind of set is called a "hierarchy" (pronounced "higher-R-key"), meaning that items have been arranged into broad sets and then split into smaller sets.
